Ingredients
- 1/2 cups coconut oil
- 1 cup brown sugar
- 1 egg
- 2 Tbsp molasses
- 1/2 cup all purpose flour
- 1/2 cup milled roasted flaxseed
- 1/4 cup chopped walnuts
- 1/2 cup raisin
- 1 1/2 cups natural bran
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cloves
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 cup buttermilk
Directions
- Preheat oven to 400 F.
- Beat together first four ingredients.
- Add remaining ingredients until just blended.
- Pour into 12 lined muffin cups.
- Bake at 400 F for 25 minutes.
- Yield: 12 muffins 1 muffin/serving.
- Variation: add 1/2 cup of blueberries or grated fruit to the dry ingredients.
