Blueberry Roasted Flax Pancakes
Colourful and nutritious – boost your breakfast!
Serves 6.
INGREDIENTS
1 cup flour
1/4 cup milled golden roasted flaxseed
3 tsp baking powder
1/2 tsp salt
1 egg, beaten
1 1/4 cup milk
2 tbsp canola oil or butter
1/2 cup blueberries ( fresh or frozen)
DIRECTIONS
Sift together all dry ingredients.
Combine egg, milk and oil.
Add dry ingredients stirring until just moistened.
Add blueberries.
Bake on hot griddle.
Makes 8 pancakes.
