Carrot Walnut Flax Flour Cupcake Bites

These carrot walnut flax flour mini cupcakes are an ideal comfort food for all occasions

This recipe serves 15 mini cupcakes

Carrot Muffins

INGREDIENTS

3/4 cup of CanMar Golden Flax Flour
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
¼ tsp salt
¼ cup coconut sugar
2 large eggs beaten
2 tsp coconut oil
¼ cup maple syrup
½ tablespoon vanilla
½ cup grated carrots
¼ cup finely chopped walnuts

DIRECTIONS

Mix the dry ingredients together, and in a separate bowl the wet ingredients
Stir them together and let stand for 10 minutes
Using a small scoop, fill the mini cupcake liners and bake for about 20 minutes at 350 degrees
Let cool for 15 minutes and enjoy
