Carrot Walnut Flax Flour Cupcake Bites

These carrot walnut flax flour mini cupcakes are an ideal comfort food for all occasions

This recipe serves 15 mini cupcakes

Ingredients

  • 3/4 cup of CanMar Golden Flax Flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ¼ cup coconut sugar
  • 2 large eggs beaten
  • 2 tsp olive oil
  • ¼ cup maple syrup
  • ½ tablespoon vanilla
  • ½ cup grated carrots
  • ¼ cup finely chopped walnuts

Directions

  • Mix the dry ingredients together, and in a separate bowl the wet ingredients
  • Stir them together and let stand for 10 minutes
  • Using a small scoop, fill the mini cupcake liners and bake for about 20 minutes at 350 degrees
  • Let cool for 15 minutes and enjoy
