These carrot walnut flax flour mini cupcakes are an ideal comfort food for all occasions
This recipe serves 15 mini cupcakes
Ingredients
- 3/4 cup of CanMar Golden Flax Flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp salt
- ¼ cup coconut sugar
- 2 large eggs beaten
- 2 tsp coconut oil
- ¼ cup maple syrup
- ½ tablespoon vanilla
- ½ cup grated carrots
- ¼ cup finely chopped walnuts
Directions
- Mix the dry ingredients together, and in a separate bowl the wet ingredients
- Stir them together and let stand for 10 minutes
- Using a small scoop, fill the mini cupcake liners and bake for about 20 minutes at 350 degrees
- Let cool for 15 minutes and enjoy
