Maple Flax Cookie

A true vegan option for all the cookie lovers out there!

Recipe adapted from Jae Steele’s 2008 cookbook Get It Ripe: A Fresh Take on Vegan Cooking and Living.

Makes 20 cookies.

1 cookie/serving

INGREDIENTS

2 cups spelt flour
1/4 cup roasted flaxseed
1/2 cup Maple syrup
1 tsp cinnamon
1 tsp sea salt
1/2 cup coconut oil

DIRECTIONS

In a large bowl mix together flour, roasted flaxseed, cinnamon, sea salt. Add Maple syrup and oil just until absorbed.
Line baking sheet with parchment paper and preheat oven to 350 F.
Using a table spoon roll into balls and place on parchment paper 2.5 cm apart.
Indent with your index and middle finger like a peace sign to create a wave like impression.
Bake in batches at 350 F until bottom is golden for about 10-12 minutes.
Cool for 5 minutes before moving to a rack.
