O lala Salad with Roasted Hemp Seeds
Great for lunch.
Add a small grilled chicken breast or a handful of cooked chickpeas for extra protein power.
Serves 4.
INGREDIENTS
4 cups spinach
6 large strawberries, sliced
1/2 red onion, fine rings
1 tsp sugar/honey
1/2 tsp salt and pepper, each
3 Tbsp balsamic vinegar
3 Tbsp olive oil
2 Tbsp chopped peppermint leaves
3 Tbsp whole roasted hemp seeds
DIRECTIONS
In a large bowl place salads, strawberries, and onions. Toss.
In a small container mix together sugar, salt, pepper, balsamic vinegar, olive oil
Just before serving pour dressing over salad, mix and toss slightly.
Top with chopped peppermint leaves and roasted hemp seeds.
