Mixed Salad with Roasted Hemp Toppings

Ingredients

  • 1 bunch mixed leaves, washed, ripped into bite size pieces
  • 1/2 cucumber
  • 1/2 cup cherry tomatoes
  • 1 avocado, peeled and sliced
  • 6 tbsp roasted whole hemp seeds
  • Dressing

  • 3 tbsp olive oil
  • Juice from 2 lemons
  • 1/4 tsp salt
  • 1 Tbsp honey

Directions

  • Place salad leaves, veggies and avocade in a large bowl
  • In a small bowl mix together dressing.
  • Just before serving mix salad with dressing.
  • Top with roasted hemp seeds.
