Vitality Muffin

Flavourful with cinnamon and nutmeg.

Substitute raisins for cranberries.

INGREDIENTS

1/2 cups coconut oil
1 cup brown sugar
1 egg
2 Tbsp molasses
1/2 cup all purpose flour
1/2 cup milled roasted flaxseed
1/4 cup chopped walnuts
1/2 cup raisin
1 1/2 cups natural bran
1 tsp baking soda
1/2 tsp salt
1 tsp cloves
1 tsp cinnamon
1 tsp nutmeg
1 cup buttermilk

DIRECTIONS

Preheat oven to 400 F.
Beat together first four ingredients.
Add remaining ingredients until just blended.
Pour into 12 lined muffin cups.
Bake at 400 F for 25 minutes.
Yield: 12 muffins 1 muffin/serving.
Variation: add 1/2 cup of blueberries or grated fruit to the dry ingredients.
