Vitality Muffin

Flavorful with cinnamon and nutmeg. Substitute raisins for cranberries.

Ingredients

  • 0.5 cups canola oil
  • 1 cup brown sugar
  • 1 egg
  • 2 Tbsp molasses
  • 0.5 cup all purpose flour
  • 0.5 cup milled roasted flaxseed
  • 0.25 cup chopped walnuts
  • 0.5 cup raisin
  • 1.5 cups natural bran
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp cloves
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg

  • 1 cup buttermilk

Directions

  • Preheat oven to 400 F.
  • Beat together first four ingredients.
  • Add remaining ingredients until just blended.
  • Pour into 12 lined muffin cups.
  • Bake at 400 F for 25 minutes.
  • Yield: 12 muffins 1 muffin/serving.
  • Variation: add 1/2 cup of blueberries or grated fruit
